We really love the depth that Chef Christopher Kimball goes to when presenting recipes in his Milk Street publication, especially when introducing something from another culture. A few years back, his inclusion of Roman Broccoli pasta sauce was a game changer for me. Found in the simple cafes of Rome, this traditional sauce has an unexpected heat from chilis, and a rich greenness from fresh spinach. But, I also love how very simple and easy this is to make – and that it uses all of the broccoli, including the otherwise fibrous stems. Deliciozo!
