Taste from Afar: Contemporary African Cooking
For Dreaming of: Recipes from Morocco’s Leading Chefs
After opening the first African-focused food hall in Dubai, award-winning Chef Alexander Smalls set out on a mission to create a cookbook celebrating African cooking. A lot of the food he was finding, especially in the US, was focused on African-American cuisine, rather than African cuisine. So he travelled around the continent to find the best chefs and asked them to make their favorite dish from their country. The result is a cookbook rich with stories, flavors, and passion.
There are 5 recipes highlighted from Moroccan chefs including:
- Beef Shank Tagine
- M’encha
- Moroccan Pigeon Pie
- Slow-cooked Lamb Shoulder
- Strawberry Yogurt Dessert
