The origins of Michelin’s stars started as a marketing exercise for the tire company back in France, as a way to encourage drivers to get out and explore the countryside, and visit some well-reviewed dining spots. It slowly morphed into the most recognized symbol of culinary excellence worldwide.
The distinctions, decoded:
One MICHELIN Star is awarded to restaurants using top quality ingredients, where dishes with distinct flavours are prepared to a consistently high standard.
Two MICHELIN Stars are awarded when the personality and talent of the chef are evident in their expertly crafted dishes; their food is refined and inspired.
Three MICHELIN Stars is the highest award, given for the superlative cooking of chefs at the peak of their profession; their cooking is elevated to an art form and some of their dishes are destined to become classics.
The Bib Gourmand is awarded for great value, and highlights simple yet skillful cooking at an affordable price.
Beginning in 2020, the Green Star is awarded to restaurants that are role models for sustainable gastronomy.
Michelin-Recommended restaurants are not given one of the above awards, but they are still included as having been reviewed and for providing excellence in cooking.
In the United States, there are:
14 - 3 Star Restaurants
32 - 2 Star Restaurants
214 - 1 Star Restaurants
& 34 - Green Star Restaurants (many of which also have a traditional star)
