Eat: Finca Agroecologica El Paraiso

A world away, and by the way the birds fly, just 90 miles. Cuba, for most Americans, might as well be on the other side of the planet – as oddly remote as it gets. And the way your cell phone will have limited access, and for the agricultural island’s bewildering export practices and over-reliance on canned goods, you would think you’ve turned back your clocks to another century. The food in Cuba is notoriously unpredictable, and in our experience, not that good. That is, unless you’re at this Finca in the Viñales Valley.

On a hilltop surrounded by incredible natural monoliths (a UNESCO World Heritage Site), this farm has to have one of the most beautiful vistas in the country. Alfresco porches sit adjacent to a small, brightly-painted casita, where guests dine on a smorgasbord of freshly prepared dishes served family style.  And as it’s an organic farm, they grow their own produce, and have a reliable, consistent, and seasonal menu. (Refreshing for Cuba!) Expect simple pleasures: soups, salads, roasted vegetables. We loved the herbal fruit smoothies served first. For entertainment beyond the vistas, visitors can tour the farm and see what’s growing for themselves. There was even a guy there who drew maps from memory on a blank notebook. Years later, we still dream of this magical place.
